What dissolves dough

To know what dissolves dough, you need to know what is holding it together. It is two things, and each one needs a different tool.

What dough is made of

Most of dough is starch: long chains of sugar units packed into flour granules. Add water and they swell, then set into a sticky paste as they dry. That paste is the glue on your bowl.

The rest of the story is gluten, a stretchy protein network that forms when flour proteins meet water and movement. It is what makes dough elastic, and it is what makes dried residue come off in tough sheets rather than crumbs.

One job per enzyme

Amylase cuts starch chains into short pieces that dissolve in water. The film stops being a film and becomes something the water can carry off.

Protease works on the protein side, relaxing the gluten net so it no longer holds the residue together in one stubborn sheet.

Run both in warm water and dough loses its structure and its grip at the same time. That takes about 10 minutes, which is why enzyme soaks replace overnight ones.

Why the usual suspects fail

Dish soap. Its molecules have a fat-loving end and a water-loving end, so they lift oil. Starch and protein are neither, so soap has nothing to do here.

Vinegar. Acetic acid dissolves alkaline mineral deposits like limescale. It does not cut a starch chain or unpick gluten.

Heat. Very hot water gelatinizes and then sets starch, the same process that firms up a loaf in the oven. It bonds the residue instead of releasing it.

  • Does not work: Vinegar targets mineral scale.
  • Does not work: High heat sets starch harder.
  • Works: Enzymes target starch and gluten directly.

Why cleanup order matters

Enzymes work on residue they can reach in warm water, so they go first, before soap and before any hot rinse. Detergent films and set starch both get in their way.

So: scrape solids into the bin, soak with enzymes in warm water, then rinse. Wash normally afterwards if the item needs it.
