How to dissolve dough

Dough does not dissolve in soap or hot water because it is starch and gluten, not grease. To dissolve dough, soak it in warm (not hot) water with an enzyme cleaner: amylase breaks down the starch and protease relaxes the gluten, so the residue loosens and rinses away in about 10 minutes.

Why dough is so stubborn

Flour is mostly starch. When dough sits on a bowl and the water evaporates, that starch gelatinizes and then sets into a glue-like film that grips the surface. Gluten, the protein network you built by kneading, forms an elastic net through it and holds the whole mess together.

Dish soap is designed to lift fat, so it does neither job. Very hot water is worse than it looks: heat sets starch the same way it does inside a baking loaf, so a blast from the hot tap can lock the residue on tighter than before.

The steps

  1. 1. Start with a room-temperature bowl. Scrape loose dough into the bin with a flexible scraper. No hot tap yet.
