Dissolve dried sourdough starter
Every starter jar ends up with a ring near the top that laughs at sponges. It comes off without scrubbing once you soak it in the right thing.
Why starter dries into a glassy film
Starter is flour and water, which makes it close to pure starch paste. As the water leaves, that paste shrinks tight against the glass and dries into a thin, hard, almost transparent layer.
It is the same chemistry bakers use as a glue on pastry. Very effective, which is the problem.
The jar method
- 1. Scrape usable starter or discard into a container or the bin. Not the sink.
- 2. Fill with warm water and add enzyme cleaner, going above the dried ring so the whole film is submerged.
- 3. Wait about 10 minutes, then swirl the jar to sweep loosened film off the walls.
- 4. Work the shoulder with a soft bottle brush, the narrow curve where the worst of it hides.
- 5. Rinse warm, bin any solids, and stand the jar upside down to dry.
How often the jar really needs a clean
Less often than the internet suggests. Scraping the walls down at each feed keeps the jar workable, and a little dried film does not harm the culture.
Swapping into a fresh jar, or giving the current one a full clean, every week or two is plenty. Do it when it bothers you or when the film starts hiding your rise marks.
